Heat Stability: Good

Properties: Bixin is oil soluble. Alkaline Norbixin is water soluble. Norbixin will precipitate under acidic conditions (typically pH's less than 4) but acid stable versions (~3.0) are available.

Applications: Baked goods, cheese, cereal, ice cream, ice cream cones, sausage casing, spice blends, soups, dessert products, fruit juice drinks, beverages and flavors, fats, oils, butter, margarines, processed cheeses, snack foods, confectionery coatings, and snacks.
