Properties: Carmine is a pigment which can be solubilized in alkaline water. It will precipitate below pH 3.5.

Applications: Depending on regulations cosmetics, pharmaceuticals, dairy products, baked goods and confections, yogurt, surimi products, beverages, ice cream and fruit fillings.
